Yummy Cheesy Chicken & Rice!

The weather has been cooling off here in Iowa, football season starts this weekend, I've brought out my hoodies. It's safe to say I'm ready for fall!


Derek and I were laying in bed one night last week and I was perusing Pinterest for some new recipes. I found this one recipe for Cheesy Chicken & Rice that looked delicious. I showed Derek the pictures and he agreed. We decided to bust out the crock pot last weekend and ran to the store to pick up the fixings.


You guys, this is such a good recipe and it's so easy! We were a tad late in starting, so we cooked it on high for the first couple hours to speed it along as it calls for 6-8 hours on low. That was probably our biggest mistake because it was more on the mushy side, but it will still delicious. My boys can be pretty picky eaters, but my oldest loved it too!


Cheesy Chicken & Rice



Ingredients:

  • 1 10 oz can cream of chicken soup

  • 1 10 oz can cheddar cheese soup

  • 1 1/2 cups water

  • 1 small onion diced

  • 1 cup uncooked rice

  • 4 chicken breasts

  • 1/2 tbsp lemon pepper seasoning

  • salt and pepper to taste

  • shredded cheese for topping, optional


Instructions:

  1. In a medium bowl, combine cream of chicken soup, cheddar cheese soup, water, diced onion and rice.

  2. Stir well to combine.

  3. Spray your slow cooker with nonstick cooking spray.

  4. Put chicken breasts in the bottom of the slow cooker.

  5. Season with Lemon & Pepper Seasoning, salt and pepper.

  6. Pour soup mixture over chicken breasts.

  7. Cover and cook on low 6-8 hours.

  8. Sprinkle additional shredded cheese on top and cover for an additional 5-10 minutes until cheese is melted. Then serve!
